Here, the bold fire of the Himalayas meets the rich, earthy flavours of the lowlands — charcoal-grilled Sekuwa and smoky Newari Choila from the hills, Mughlai-inspired mains from the plains, and a wood-fired oven where dough rests for two full days before it ever touches the flame.
